Edgebrook 'Wildling' Cider 
Wild fermented, barrel aged, traditional 'English Scrumpy-style' cider

Apples: Blended with five traditional French and English cider apple varieties; Nehou, Southpoint Sweet, Michelin, Siberian Crab and Golden Russet. 

Fermentation: Predominantly wild-fermented in seasoned oak barrels. An exceptionally cold winter extended the fermentation for 2 months. Further maturation on yeast lees added complexity. 

Tasting notes: In the English West country style, like the ciders of Somerset, our Wildling cider is complex, rich and full-bodied.  Weighty and voluptuous with a hint of smokiness from the wild, barrel fermentation, this cider is bold and brave. Finishes with a rich mouthful of tannin and a hint of sweetness.
