Spring is a special time in the cidermaking calendar. It is the time when the trees wake up, buds swell, blooms break and the bees get busy setting the crop. Soon after, little apple clusters need thinning, unwanted shoots need pinching and new, young branches need training. It all happens very rapidly and the orchardist cannot be far from the orchard. Well, it's mid way through the year and, while the cooler weather is upon us, the Edgebrook cidery is hotting up! We have now harvested, tumped, milled, macerated and pressed all of the apple varieties for this year’s cider. Edgebrook Cider is about as English countryside as you can get in Hawke's Bay. In addition to their "Festive" (an English east-counties-style cider) and "Village" (an English west-counties style cider) this year's offering is "Orchard", a cider using mainly bittersweet apples, macerated before pressing and wild-fermented mostly in barrel.
